You can't go wrong with either boneless breasts or thighs, as both options provide great results. Boneless Skinless Chicken
Flour, Cornmeal, Panko Breadcrumbs
Fresh Lemon Juice & Zest
Season Salt, Pepper, Granulated Garlic, Dried Oregano, Crushed Red Pepper Flakes (optional)
Cooking Oil - Canola, Vegetable, or Corn Oil
Heavy Pan with Cover
Paper Towel for Draining
Pour oil into pan and allow to heat on low
Clean, cut, & season chicken, set aside
Prepare flour mixture in zip lock bag, remember to season
Place chicken in bag and shake it well to coat all pieces thoroughly
Test the oil with a wooden spoon to ensure the temperature is good
Add chicken in a single layer and cover to cook for about 10-12 minutes depending on size of the pieces
Once brown around the edges, flip and cover again but only for about 5 additional minutes
When chicken pieces are brown on both sides, remove from oil and place on the paper towel to drain excess oil
Chicken pieces may be eaten hot, warm, room temperature, or cold
