For a delicious and hassle-free chicken and waffles recipe, boneless and skinless chicken is the way to go. You can't go wrong with either boneless breasts or thighs, as both options provide great results. To enhance the taste, generously season the chicken with lemon juice, seasoned salt, pepper, garlic, and crushed red pepper. Equally important is seasoning the coating with the same spices to ensure that the flavors blend together perfectly. If you only season the chicken, the flour mixture may overpower the taste.

To start, it is crucial to properly cleanse and dry your chicken before preparing it for cooking. Taking the time to slice the chicken into smaller strips or nuggets will ensure that it cooks evenly and is easier to eat.

Once you have cut the chicken, drizzle fresh lemon juice generously over the top, which will add a delightful zesty flavor to the dish. Be sure to season the chicken with your preferred spices, allowing the flavors to merge together perfectly.

Now it is time to prepare the coating mix. Begin by mixing equal amounts of flour, cornmeal, and panko breadcrumbs together. To give the coating mix a tangy kick, add some fresh lemon zest to the mix. Don't forget to include your desired seasonings, which will add depth and complexity to the dish. Once the coating mix is ready, transfer it to a sealable bag. Then, add the chicken and shake the bag thoroughly, ensuring that each and every piece of chicken is evenly coated with the flour mixture.

To fry chicken, it is important to use a heavy covered pan and add fresh cooking oil of your choice, such as canola oil, vegetable oil, or corn oil. Pour about 2 inches of oil into the pan and heat it until it lightly bubbles when a wooden spoon is placed in the oil. Place the chicken in a single layer in the pan, ensuring that it is bubbling. Cover the pan and reduce the heat, allowing the chicken to cook for approximately 10 minutes or until it turns golden brown. Flip the chicken only once and continue cooking until both sides are brown. Finally, remove the chicken from the pan and place it on a paper towel to drain.
