Creamy Dairy-Free Soup: The Ultimate Comfort Food

RECIPE:
3 medium or 4 small heads fresh broccoli
6 cloves fresh garlic
1 small shallot diced
2 onions diced
3 peeled russet potatoes medium
4 Tablespoons of Butter (or olive oil for diary free)
French Loaf for Cheesy Croutons
1-1/2 - 2 Cups shredded diary-free cheddar cheese
1 cup chicken broth or vegetable broth
4 cups water
1 hand held blender to emulsify
Seasonings needed: season salt, granulated garlic, black pepper, sea salt, crushed red pepper flakes
Peel broccoli stems, remove from the crowns, cut stems into small pieces
Peel and dice potatoes set aside
Melt butter or heat oil in a heavy stock pot - add garlic, shallots & onions - sauté until slightly transparent
Add broccoli stems and potatoes - lightly season with season salt and granulated garlic
Add water and let come to boil simmer for 20 minutes
Add 1/2 broccoli florets and simmer for 7 minutes until soft
Remove from heat - emulsify with hand blender until smooth - taste and additionally season to taste
Add remaining florets simmer for 5 minutes
Add 2 cups of cheddar cheese
Cheesy Croutons: sliced French loaf spray with non stick spray, sprinkle with granulated garlic, shredded cheddar, pinch of crushed pepper flakes (optional). Place under the broiler until melted. Lightly cool and cut into small squares for croutons.
Serve soup in large soup bowls and croutons on the side
