RECIPE
Chicken Tortilla Soup
1 can Black Beans drained
1 can Kernel Corn drained
1 can Fire Roasted Diced Tomatoes with juice
1 medium Onion chopped
1/4 Small Jalapeno Pepper-seeds removed-chopped
1/2 Green Pepper chopped
3 Cloves of Garlic chopped
1 box Chicken Broth
1 Bunch fresh Cilantro
Shredded Monterey Jack Cheese
1 Ripe Avocado (optional)
Tortilla Strips or broken Chips
1 Rotisserie Chicken - Breast meat shredded
Olive Oil
Smoked Paprika
Chili Powder
Granulated Garlic
Granulated Onion
Chipotle Seasoning (optional)
Season Salt
In a heavy soup pot heat olive oil and add onions, peppers, garlic lightly season and cover to sweat and soften veggies
Add drained beans, corn & fire roasted diced tomatoes with juice
Season with season salt, granulated garlic, chili powder, smoked paprika, chipotle seasoning & cilantro. Stir to evenly coat all ingredients.
Fold in shredded chicken to mix all ingredients - add more cilantro
Pour in chicken broth & simmer 15 mintues
Ladle into bowls top with sliced avocado, grated cheese & tortilla strips or broken chips, fresh cilantro.
